Steak salad with blue cheese, avocado and basil balsamic dressing recipe

Ingredients:
    For the basil balsamic dressing:
  • 2-3 tablespoons balsamic vinegar, adjust based on your preference
  • 3-4 tablespoons olive oil, adjust based on your preference
  • 1 garlic clove, crushed
  • 1 tablespoon chopped basil
  • Salt and pepper to taste
  • For the steak salad:
  • ~4 cups of your choice of mixed salad greens
  • 1 avocado, diced or sliced
  • ¼ red onion, sliced
  • 1 medium to large grilled or seared steak, cooked to your preference – sliced into strips
  • ~4 ounces of crumbled blue cheese, can also use feta/goat cheese/queso fresco
  • A few extra chopped basil leaves
Instructions:
  1. To prepare the basil balsamic salad dressing, place the ingredients in a small bowl and whisk lightly. Can be made ahead of time, refrigerate until ready to use.
  2. To prepare the salad, place the salad greens in a salad bowl, add the diced avocado, red onion slices, steak strips, crumbled blue cheese, and the chopped basil.
  3. Sprinkle the balsamic dressing over the salad, toss and serve immediately.
